Mushroom Meatloaf Dad’s Favorite
SERVES 8 PREP TIME 20 Min COOK TIME  90 Min READY IN 1 Hour 50 Min
Ingredients: 1 lb ground beef 1 lb ground pork 1 cup dry bread crumbs (can use dry stuffing mix) 1 6oz can of mushroom stems and pieces 2 eggs 1 tsp. celery salt 2 tsp. Parsley 1 small onion chopped (you can use dehydrated onion in place of fresh) 2 cans cream of mushroom soup 1½ cups grated cheese
A nice change from the normal tomato based recipe:
Directions: 1. In a large bowl mix beef, pork, bread crumbs, eggs, celery salt, parsley, onion, 1 can of cream of mushroom soup, and 1/2 cup cheese. Mix very well. 2. Transfer mixture to a large greased loaf pan (or two smaller ones – one to freeze for later), pour the other can of mushroom soup on top and cover with remaining cup of cheese. 3.  Bake at 350°F for 1 1/2 hours on middle rack. You may want to put loaf pan on a cookie sheet to catch drippings for easy cleanup. Ovens vary so check after 1 hour. Side dish suggestions: Baked Potatoes - if you put in 30 or 40 minutes (depending on size) after meatloaf they will be done at the same time.
